Passion Fruit Blackberry Punch
Last drink on our rainbow countdown to summer drink list is: Passion fruit Blackberry Punch. We added a secret ingredient today, Star Anise. It has a licorice flavour, for those who aren’t sure what it tastes like. I’ve used it before in sweet breads.
I love blackberries, I love their colours, the flavour, picking them while outside running – wild off the shrubs! I don’t like the seeds.
Passion fruit is equally lovely and seedy. Putting passion fruit, blackberry and star anise in the blender gave us a great flavour and tons of debris. Our recommendation is, strain it. I have a fine tea strainer that was up to the job with a little water and coaxing and we have a lovely naturally sweet summer sparkling beverage.
When we taste tested this, the overwhelming response was “oooooo, this is nice”. The licorice isn’t overpowering; the passion fruit and blackberry bring a natural sweetness and subtlety to the drink that is calmly refreshing. That has been used a lot when describing all the rainbow drinks, but that was also the point of all the drinks. Fun, healthy, refreshing drinks to enjoy over the summer.
Another simple preparation with the blender as the star of the show. I added the seeds of 1 passion fruit, 7-10 fresh blackberries and 1 star anise to the bottom of the blender cup. Blended until smooth(ish) and strained directly into the bottom of the glass, with a little coaxing from a tablespoon of plain water and the back of a spoon, topping it up with blackberry flavoured sparkling water. It is a naturally sweet, tasty drink.
This recipe made three glasses:
- 7-10 blackberries
- 1 passion fruit
- 1 star anise
- blackberry flavoured soda water
Blend smooth, strain, add 2 oz. to the bottom of a glass and 6 oz. of blackberry flavoured sparkling water.
