Feeling the Christmas season and not sure cookies are the answer? Dive into a bowl of gluten free oat granola dripping with warm gingerbread flavour. A batch of gingerbread granola is low in sugar, high in fibre and satisfies that craving for warm and crunchy gingerbread without all the sugar.
We mixed quick oats and rolled oats, all gluten free of course. I recognize this is not necessarily celiac friendly and encourage those who need to swap out the potential irritants for other ingredients to try brown rice and quinoa flakes or other favourite granola ingredients.
Seasoning this granola was a snap, pun intended. We made it on the same day as our gingersnaps, used the same basic recipe and added a little of our mulled apple cider for a flavour boost. Gingerbread granola turns dark and rich with molasses, clove, cinnamon and ginger as it bakes. If you don’t have mulled apple cider handy, use apple juice or skip this altogether. The recipe will still be fantastic, I just had some left over and like to use up leftovers.
Granola is a staple snack in his house, gingerbread granola lasted less long than usual due to its beautiful flavour and crunchy texture. It always amazes me how fast it disappears when I make a batch or even double batch. We generally don’t wait for milk or yogurt to eat our granola. The crunch of plain granola is too hard to resist and we enjoy it straight from the oven, even when its too hot sometimes, ouch!

Decadent Gingerbread Granola
- measuring spoons

- large bowl
- cookie sheet
- 2 cups gf quick oats
- 2 cups gf rolled oats
- ½ cup coconut sugar
- ¼ cup coconut oil, warmed up so it is fluid
- ½ cup molasses
- 2 tsp. ginger
- 2 tsp. cinnamon
- 1 tsp. cloves
- 1 cup mulled apple cider
- Preheat oven to 300° F
- In a large bowl mix both types of oats
- Add all spices and sir to combine completely
- Add warmed coconut oil and molasses.
- Stir completely, add mulled apple cider, if using and spread level on a baking sheet.
- Bake in preheated oven, stirring after 30 minutes and about every 30 minutes until it is crisp and cooked.The house should smell wonderful! You're welcome
