Blueberry Lavender Bubbly
Number five on our rainbow countdown to summer drink list is: Blueberry Lavender Bubbly. I was a little hesitant on this one, I asked the husband (Chef and food blog – Cookin’ It Easy) what I should pair with blueberry. He immediately said lavender. I am not a fan. I haven’t eaten or smelled it in any preparation that made me say yes.

Luckily, our daughter loves lavender and insists on planting it in our balcony planters. I like how it looks and always support my daughter wanting to garden. This meant I had lots of fresh lavender, to pick from.
We had frozen blueberry in our freezer from last summer and this recipe was ready to go. About 18 years ago, I didn’t like blueberries either, I guess we all grow up in stages.
Blueberry season is now one of my favourite times of the year and I stock up on the fresh ones, which I eat out of the fridge, make blueberry scones, make blueberry syrups for pancakes, make blueberry pancakes. You get it, I am now convinced, so please enjoy this blueberry lavender bubbly, I have never been so happy to be wrong.
Another simple preparation with the blender as the star of the show. I added about 30 frozen blueberries to the bottom of the blender cup, added 1 Tbsp hot water and ¼ cup of coconut milk. I added about 5 lavender flower tops. Blended until smooth and placed some in the bottom of the glass, topping it up with blueberry flavoured sparkling water. It is a naturally sweet, soothing drink.
This recipe made three glasses:
- 30 blueberries
- ¼ cup of coconut milk
- 5 lavender tops
- 1 Tbsp water
- blueberry flavoured soda water
Blend smooth, add 2 oz. to the bottom of a glass and 6 oz. of blueberry flavoured sparkling water. It helps to tilt the glass to the side like you were pouring beer.
